I Suppose if I Have to Cook, I Will

I’m discovering, very rapidly, that if you have a strict nutrition plan you are try to stick to, you can NOT rely on your “approved” food to be readily available. Oh, no, no, no! You must plan ahead!

Following the advise of my ridiculously fit boyfriend–who happens to double tripple as my nutrition coach, personal trainer and biggest supporter–I made a ginormous healthy gouloshey type meal composed of pretty much all of the food I have left in my kitchen.

- One maranated baked chicken breast (I don’t remember what I maranated it in), diced up.

- One package of frozen summer vegitables.

- One box of “All Natural Brown and Wild Rice”.

Simply cook all above ingredients separately, then throw them all together, and VOILA! You’ve got three meals (two if you have a larger appetite) just waiting to be heated up!

I know the picture doesn’t do it justice, but I swear to you it really is good.

Now the hard part… remembering to take it with me when I leave the house!

    That looks delicious! If you cook healthy food for me, I’ll share my *healthy* red wine. And you can even see what random stuff I have at my house to use.

    I started to subscribe to a healthy eating magazine, making a menu every week, and sometimes actually stick to it. BUT…having exciting new recipes to try has really encouraged me to cook more and I don’t get so bored with my healthy food (possibly because I still eat junk).

    The easiest things for me to take with me on the go when I was on my crazy yeast free diet were salads with hard boiled eggs and dressing on the side in a little container. I also took nuts (macadamia nuts and cashews are my fav), and just cut up veggies. You can also find some good organic soups that you can heat up or take in a thermos on the go.

    Yum-O! Around “these here” parts we call that kind of dish “spluh” :) Lately we’ve found just adding some rolled oats to ground beef is really good too and that oats soak up all the lovely spices and add some nice texture. mmm…meat + fiber.
